To make the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (produces 850ml, to serve 10)

400ml good quality vodka

Directions

Making the Cordial: Combine every ingredients into a saucepan, bring to a simmer, mixing until the sugar dissolves. After that, turn off the heat and leave to reach room temperature fully. Pour to a sealable bottle, seal keeping it in the fridge, where it will keep for up to a month.

For the Premix: Pour every liquids in a large bottle, let it rest for one hour, then filter it best through muslin, to ensure it's fully clarified.

To serve: Pour 85ml of your premix into your mixing glass containing ice, gently stirring carefully for a minute to chill. Pour to a cold coupe glass or equivalent, top with a few cranberries and finish with a quick spritz of the essential oil above the glass.
